70CL, 45% ABV, Non-Chill-filtered, and Pedro Ximenez Cask Maturation
The first five years were spent in American Oak Barrels and then the whisky was transferred to first fill Pedro Ximénez Puncheons from the Jerez region of Spain where it has been maturing for the past eight years and this is the first release of this fantastic whisky at age 13 YO.
Bottled at 45% ABV, it has not been chill-filtered, thus leaving in the wonderful oils typically stripped by this process.
Nose: A sweet nose opens with icing sugar and Parma violet, evolving into creamy butterscotch and ripe banana. As it develops, notes of dark chocolate toffee, Medjool dates, and sun-dried raisins emerge, with a subtle hint of lingering liquorice.
Palate: Manuka honey greets the palate, swiftly followed by hot baked apples and warm oak tannins. A touch of white pepper adds gentle spice before blackcurrants unexpectedly appear. A fleeting menthol note emerges as it leads into the finish.
Finish: An oily finish starts with 70% dark chocolate, developing into rich espresso. Green banana notes emerge before fading into a hint of dark cherries, with a subtle sweetness of blackcurrants woven throughout.
