Knockdhu Single Cask
We had tried AnCnoc (the branded expression produced by Knockdhu) several years ago and were impressed by the long lingering flavours that it is renowned for. So, when a cask from the distillery became available, we asked for a sample. The sample we received was unusual, as it was lightly peated, which is very rare from this distillery. Loving what we had found, we bought a cask. It was an ex-bourbon barrel, which had been filled on 1st February 2008.
In Spring 2023, Roman was sorting through some of our casks and, on sampling this cask again, he decided to finish this whisky in a 1st fill Oloroso Hogs Head we had in the stables.. We finished the whisky for 20 months before bottling it.
"When we first tried the sample of one of the Knockdhu casks, in our tasting room on the estate, we were surprised by the light smokiness and how it worked so well with the fruity character Knockdhu is known for. So, we knew we had something special. Then I got experimental and opted to add rich sweetness to the mix, by using the sherry cask. I ’m glad I did, as the result has been fantastic." - Roman S
